Spanish Tomato Rice Salad (serves 8) 3/4 cup prepared Backyard Patch Marcy's Dill Dip
This is a great make ahead item
8 ripe tomatoes (3 1/2 inches in dia.)
1/3 cup chopped green pepper
1/4 cup chopped green onion
2 cups cooked rice
1/2 cup tomato meat
Slice the tops off each tomato and scoop out the inside, making tomato cups. Reserve 1/2 cup of inside meat for use in recipe. Saute together green pepper and onion in a little oil. Add rice, tomato meat and dill dip. Stuff tomatoes and garnish with bacon bits. Chill and serve.
Herbed Dijon Marinade
1/3 cup olive oil
1/4 cup herbal vinegar
1 Tbls. fresh lemon juice
1 tbls minced garlic
4 tsp.
1/4 tsp. salt (optional)
1/4 tsp. sugar
1/2 tsp. Backyard Patch Meat Seasoning or Grilled Meat Rub
Combine ingredients, mix well. Pour over meat, poultry or fish. Cover and chill overnight.
